UJI PERBANDINGAN KADAR GLUKOSA BERAS MERAH SEKO (VARIETAS DAMBO) DAN BERAS MERAH TORAJA (VARIETAS SEMANDI)

Beras merah merupakan salah satu pangan fungsional yang memiliki kandungan nutrisi dan senyawa bioaktif yang berpotensi memberikan manfaat kesehatan, termasuk dalam pengendalian kadar glukosa darah. Penelitian ini bertujuan untuk membandingkan kadar glukosa pada beras merah Seko varietas Dambo dan beras merah Toraja varietas Semandi serta menentukan varietas yang berpotensi direkomendasikan bagi penderita diabetes melitus. Penelitian dilaksanakan di Laboratorium Biokimia Fakultas Sains Universitas Hasanuddin menggunakan metode deskriptif kuantitatif. Penentuan kadar glukosa dilakukan dengan metode Somogyi-Nelson melalui tiga kali pengulangan pengujian. Berdasarkan hasil penelitian dapat disimpulkan bahwa kadar glukosa beras merah Seko berkisar antara 0,25–0,36% dengan rata-rata sebesar 0,31%, sedangkan kadar glukosa beras merah Toraja berkisar antara 1,61–1,74% dengan rata-rata sebesar 1,67%. Hasil tersebut menunjukkan bahwa beras merah Toraja memiliki kadar glukosa yang lebih tinggi dibandingkan beras merah Seko. Rendahnya kadar glukosa pada beras merah Seko varietas Dambo menunjukkan potensi yang lebih baik sebagai alternatif pangan bagi individu yang memerlukan pengendalian asupan glukosa, termasuk penderita diabetes melitus. Penelitian lebih lanjut mengenai indeks glikemik, kandungan serat, dan senyawa bioaktif diperlukan untuk mendukung pemanfaatan beras merah Seko sebagai pangan fungsional.
